Fettucine Alfredo
Ingredients
- 1/2 cup butter
- 2 TBSP. cream cheese
- 1 pint heavy cream
- 1 tsp. minced garlic (or garlic powder in a pinch)
- pinch of salt
- 1/4 tsp. freshly ground black pepper
- 1 cup grated parmesan cheese (preferably fresh)
- fresh parsley (to garnish)
- 1 lb. fettuccine, prepared as directed
- Prepare fettuccine/pasta as directed.
- Meanwhile, in a medium saucepan, melt butter.
- When butter is melted, add cream cheese.
- When the cream cheese is softened, add heavy cream.
- Season with garlic, salt, and pepper.
- Simmer for 5 minutes over low heat, stirring constantly.
- Slowly add 1/2 cup parmesan cheese and continue stirring another 5 minutes.
- Reserve 2 TBSP. parmesan, then slowly add remaining cheese and stir another 5 minutes.
- Remove from heat and stir in hot fettucine noodles, and coat pasta completely.
- Serve garnished with remaining fresh parmesan and parsley.
Makes 6 servings. 25 min total.
